Ecuador 60 (Manabi). Lactose-free. The province of Manabi is located on the Pacific Coast in one of the most beautiful areas in Ecuador; cocoa farming has had a long tradition here. The cocoa is roasted extensively at a relatively low temperature in order to bring out even the very last and finest flavours. The Cacao National of Manabi combined with 40% sugar results in plenty of flavour with a flowery accent.
Nicaragua 80 (Horizont Cuvee). Lactose-free. Horizont Cuvée is dedicated to the development organisation Horizont 3000 that takes care of Zotter's cocoa projects in Nicaragua. Zotter obtains the best cocoa from three different cooperatives in Nicaragua, a country that is still marked by civil war. Extensively roasted at 132°C, classically rolled and conched, the cocoa greatly enriches this 80% chocolate.

The story of each bar of chocoate starts with the farmers on the cocoa plantations in South and Central America. The cocoa is then roasted, milled & conched at the Zotter Chocolate Factory to become part of the legendary Zotter chocolate range.
Zotter puts an emphasis on regional economy in a tradtional and very individual way. The fresh milk for the milk powder, the butter and the cream are obtained directly from Tyrolean mountain farmers. Whole cane sugar and raw cane sugar are genuine natural products. Both sugar types are from the Philippines, are unrefined and extracted directly from fresh plant sap.
